As a kid, if l wasn't outside riding horses, motorbike or generally getting up to no good, you would often find me standing on a chair in the kitchen, stirring, mixing, rolling, folding all sorts of delicious goodies with my mum. Baking was something we did together every weekend. We were spoilt, she made everything from scratch. In fact my brother capitalised on this and used to sell food from his lunch box at school - little buggar. Kids loved raiding mums pantry, it was always packed. How we weren’t 250,00 kilos l don’t know. It must have been all that healthy farm living. One of our fave midweek treats was, and still is Lemon Delicious. As a small kid l couldn't pronounce it, so l called it Lemielicious, still in our house it is known as Lemielicious. Here is our family recipe, which l now make for my kids, its easy, delicious and for a dessert - light in calories. l hope you love it as much as we do.


INGREDIENTS
30 g Nuttelex
1/4 cup Sugar
4 Egg Yolks
1/4 Gluten Free Self Raising Flour
1/2 cup Lemon Juice
1 cup Oat or Rice Milk
5 Egg Whites


METHOD

Preheat oven to 150°C or 140°C for fan forced.

Beat nuttelex, sugar and egg yolks until smooth. While beating add flour, milk and lemon juice. Put to one side. In a seperate bowl beat egg whites until light and fluffy. Turn the beaters down to the lowest setting and add the lemon mixture until just combined. Poor mixture into a baking dish, place the baking dish into a larger baking dish. Pour boiling water into the larger baking dish until halfway up sides of the smaller dish. Bake for about 25 to 30 minutes or until golden and just set.

Serve with your fave ice-cream or enjoy it by itself.
